Nestled within the charming alleys of Bandra, Mumbai, lies a hidden gem—a snug attic reborn as Papa’s, a culinary haven that whispers of speakeasy elegance. This latest offering from Hunger Inc. Hospitality, where refinement meets warmth in a setting that’s ‘fine without fuss’. Here, Chef Hussain Shahzad unveils his culinary wizardry, reshaping the landscape of Indian flavours with a contemporary twist. As you cross the threshold, you’re transported back to the 1980s, to the allure of Art Deco charm in a quintessential Bandra abode, all thanks to the vision of Shonan Purie Trehan, Founder and Principal Architect of Studio Language Architecture. It feels almost as though the esteemed chef has extended a personal invitation to his home, eager to regale you with his finest creations.

The ambience of Papa’s envelops you in a cosy embrace, reminiscent of the inviting hues found in Wes Anderson‘s films, complemented by the warmth of natural materials and, of course, the heartiness of the cuisine served. Venture inside, and on one side awaits a cocktail bar reminiscent of the art galleries found in vintage Bandra homes. The bar counter, thoughtfully positioned at a welcoming, homey height, sets the stage for animated conversations and the crafting of delightful cocktails. On the opposite end, picture yourself seated at the chef’s kitchen table—an intimate yet lively space where a 12-seater dining table beckons. By maintaining consistency in height between the dining table and the kitchen counter, Papa’s fosters a seamless connection, enriching the overall dining experience.

Chef Hussain Shahzad brings a dynamic fusion of curiosity, boundless energy, and global expertise to the table, imprinting each dish with his distinct style and culinary ethos. Drawing from his mentor, the late Chef Floyd Cardoz, Hussain seamlessly blends traditions, techniques, and flavours to offer a nuanced yet accessible take on Indian cuisine. At Papa’s, he fearlessly challenges the norms of Indian cuisine and fine dining, presenting a bold and adventurous interpretation of familiar flavours. Here, meals are served in a tasting menu format, with Chef Hussain sharing anecdotes about each dish.

Take, for instance, the ‘Rasam,’ a homage to Chef Floyd’s iconic rice-crusted fish and watermelon curry, Hussain’s rendition features cured trout in a watermelon rasam broth, embellished with lime leaf oil and trout roe, offering a symphony of refreshing textures. The dishes epitomise Hussain’s belief that cuisine is a journey, not just a destination, blending international culinary techniques with Indian flavours to create refined yet whimsical interpretations. The menu at Papa’s is a treasure trove of surprises, where familiar names like Samosa, Modak, and Biryani unveil unexpected ingredient combinations and techniques. From ‘Kaluga Caviar’ and 12-month-old ‘Comté’ in a playful ‘Chhena Pod’a canelé to lesser-known treasures like wild rabbit meat from Nashik, and Weaver ants from Odisha, Hussain seamlessly incorporates global influences into his creations. 

 

Since its opening on February 16, 2024, Papa’s has become a beacon of culinary innovation, tantalising the taste buds of guests with each carefully crafted dish. Operating at its peak capacity of 12 guests from Wednesday to Saturday, starting from 8 PM till late, Papa’s promises an intimate and unforgettable dining experience that leaves a lasting impression on all who enter its doors.
